
Keeping Your Pizza Oven Hot When the Door Opens
If you’ve ever run a pizza oven, you know the struggle. Every time you open that door to slide in a pie, a massive wave of heat just… vanishes. It’s gone. And if your oven can’t bounce back instantly, you’re in trouble. Your crust won’t spring, your cheese stays pale, and you’ve just lost the perfect bake. That’s why we use 800W infrared (IR) heaters. The magic here is that they don’t waste time trying to heat up the air inside the oven. They send energy straight to the food. It’s direct. It’s fast.
Power is great, but control is better
Having 800W of power is a start, but raw heat can be a blunt instrument. If you just blast it, you’ll overshoot your target and burn the edges. To fix this, we use a closed-loop PID system. Think of it as a brain that’s constantly watching the oven. The second the sensor feels that dip in temperature from the door opening, the controller kicks the IR lamp into high gear to make up the difference. The result? The temperature stays flat. No dips, no spikes, just a steady heat.
The trade-off: Power vs. Fragility
We use quartz envelopes for these heaters because they handle the “thermal shock” of jumping from cold to scorching hot in seconds. But here’s the catch: quartz is fragile. If a staff member bumps the lamp or grease splatters directly onto the hot tube, it can crack or create a “hot spot” that kills the filament. It’s a bit of a balancing act. You have to make sure the lamps are shielded or tucked away where they won’t take a beating during the nightly scrub-down.
Getting the electronics right
To keep this whole thing running long-term, you need clean power. Voltage spikes are the enemy here—they’ll eat through your filaments way faster than they should. We also skip the old-school mechanical contactors and go with solid-state relays (SSRs). Since the system is constantly flicking the heat on and off to maintain that perfect temperature, you don’t want a mechanical switch wearing out. SSRs just handle the rapid cycling without breaking a sweat.
